You think vegetables cannot substitute pasta ? Are you sure ? This is such an easy yet satisfying meal, even enough for you pasta cravings. Really, try it!
You can choose either zucchini or carrot, or both.
Ingredients:
some carrots and zucchinis
500g mushrooms
small onion
1 garlic clove
low-fat cream (Rama Cremefine 7%)
1 tsp olive oil
Peel carrots and/or zucchinis. With a vegetable peeler continue to ``peel`` stripes on the whole length of a vegetable. Place in a pot, add pinch of salt and stew on medium heat until they are soft (around 15-20 minutes).
Make mushroom sauce. Chop onion, garlic and mushrooms. Stew onion and garlic on hot olive oil in a pan for few minutes, add mushrooms and let them stew for 5-10 minutes until they lose water but it does not evaporate entirely from the pan. Add cream, salt and pepper to taste.
Drain excess of water from tagliatelle and pour some sauce over it, yummy!!
