Please excuse my break in blogging!! Coming back to uni after summer break is not easy :-)
But I will make it up to you! Here is a nice and healthy recipe. It is inspired by Pierogi, but, of course minus the white flour!
To make the `dough`I used banana-oat combination (recipe
here). Yummy!
Ingredients:
Banana Oat `dough` (
recipe)
400g swiss chard
2 medium zucchinis
1 onion
1 garlic clove
0,25 cup of vegetable stock
1 tbsp corn/potato starch
0,5 cup canned corn
Make the dough as in the recipe. It is important to refrigerate it for at least 30 minutes to make it firm and easy to shape.
Make the filling. Chop onions, garlic; cut swiss chard and zucchini. Saute onion and garlic with olive oil, after few minutes add swiss chard and spinach. Mix corn or potato starch with vegetable stock and when the water is evaporated from zucchini and swiss chard, add it. It should make the filling dense but add some water if it is too sticky. Add corn in the end and, if necessary, season with salt and pepper. Let the filling cool off slightly before using it further.
Create desired shape of your dough and place filling on it, then close with opposite ends (or cover with another piece of the dough). Or simply follow your imagination!
