Fresh tomatoes are juicy and aromatic. Isn`t tomato soup simply incomparable when made from fresh tomatoes rather than canned ... something ? ;)
Try it yourself! I suggest peeling the tomatoes before but you do not have to do that. You can also bake tomatoes or simply fry them before cooking. I suggest baking them, like this the skin goes off easily.
Ingredients
700g tomatoes (your favourite red tomatoes kind)
1 onion
1 garlic clove
cream: either sour cream or Rama Cremefine 7%
1 tsp butter
fresh parsley or thyme
salt
pepper
cheese crackers:
your favourite cheese, Gruyere would be best
Cut tomatoes in half and place the inside and juice in a separate bowl. Bake tomatoes for 25 minutes in 220C. Chop onion and garlic. In a large pot, saute them on butter until they turn colour. Add tomatoes and tomato juice. Fry them for around 5-7 minutes, then add water (around 0,5l), according to how dense you want your soup.
Cook for around 10 minutes, then wait until it cools down and blend with a blender. Add cream, salt, pepper and thyme or fresh parsley.
For the cheese crackers: take a rectangular piece of cheese (3 mm thick, 4x2cm), place it on non-stick baking sheet, and bake in 225C for around 15 minutes until melted and crispy.
