Need something fast and healthy ? Here`s an idea!
0,5 cup quinoa
1 small onion
cherry tomatoes
dried tomatoes
1 cup frozen peas
2 cups frozen spinach
chicken stock (vegetable stock in vegetarian version)
optionally your favourite cheese
Boil quinoa for around 30 minutes in chicken stock. Keep adding water if necessary. Add chopped onion, frozen peas and spinach (and water if necessary). In the end add tomatoes cut in halves and cheese.
