Today I have for you a recipe for sauerkraut and mushrooms croquettes. For preparation you need to take some time, but some of them can be frozen for later.
Ingredients for the filling:
* 1 kg sauerkraut,
* 2 carrots, grated,
* 500 g mushrooms, chopped,
* 2-3 onions, chopped,
* 2 grains allspice,
* 2 bay leaves,
* few grains of pepper,
* salt, pepper,
Ingredients for the pancakes:
* 450 ml milk,
* 350 g flour,
* 1 egg,* 1 tsp salt, * 1/2 tsp pepper,* 2 tbsp olive oil,
You also needs :
* 2 eggs, beatten, * 1 cup bread crumbs, * oil for frying,
Preparation :
Stuffing:
Rinse sauerkraut with water, put into the pot, add bay leaves, allspice and peppercorns, cover with water and simmer for about 1.5 hours (until the sauerkraut is tender). Drain sauerkraut and allow to cool, remove allspice, peppercorns and leaves, cut into smaller pieces. In a large skillet heat the tbsp of olive oil, sauté onion and add to cabbage. In the same pan heat the tbsp of olive oil and fry mushrooms, add to cabbage. Season to taste with salt and pepper and mix thoroughly.
Pancakes:
Mix milk, egg, salt, oil and pepper.Gradually add the sieved flour, stirring constantly to not create lumps.If the batter is too thick add a little milk or water, in reverse situation add flour.Pour batter on very well hot pan using ladles, quickly spread it over the entire surface.Fry about 20 - 30 seconds on each side.
Croquettes:
At the center of the pancake apply 1-2 tablespoons of stuffing.
Wrap the sides to the center, then down and roll it up.
Repeat until'll use all the stuffing or pancakes.
Ready croquet put in to beaten egg and bread crumbs.
Fry on hot oil until golden brown.
