Ingredients:
20 plums cut in half 2 pieces of cinnamon 2 pieces of star anise zest and juice from one lemon
2 cups plum mousse 2 cups low-fat greek yogurt ½ cup honey
Cut the plums in half (don’t bother to remove the stones at this time) and put them cut side up on the baking tray lined with parchment paper.
Squeeze the lemon juice all over the plums and sprinkle them with lemon zest. Put two pieces of cinnamon bark and star anise among the plums.
Roast in the oven in 200 degrees Celsius for 30 minutes, until the plums are soft and have rendered some of their juices.
Put the plums aside to cool them, remove the stones, cinnamon and star anise. Put in the blender and blitz until smooth.
Put the plum mousse in the zip lock bag and freeze laying flat in the frezer.
Remove the frozen mousse from the bag, put it in the blender together with honey and yogurt and whizz until the ingredients are combined and form a smooth base.
Put into the container and freeze until needed. |
