Craving for sweet? I had an enormous one today! And I satisfied myself with a no-guilt delicious healthy omelette with banana and honey :-) First time I made a sweet omelette and it was great and very filling.
Ingredients: (3 omelettes)
4 eggs
1 package vanilla sugar
1 flat tsp cinnamon
1 tsp baking powder
1 tsp corn starch
1 tsp melted coconut oil (plus for frying)
banana cut in slices, honey or your favourite toppings

Place all the ingredients for the omelette and mix with a mixer until all is well incorporated and the mixture looks fluffy on top (around few minutes).
Melt coconut oil on frying pan and heat the pan on almost maximum heat. Fry one omelette from 1/3rd of the mixture on both sides. When both sides are cooked (just a little), put the banana on top and fold it in half to cover. Keep it a while longer on the heat to warm everything together. Repeat until you run out of the mixture. Now, take some honey or your favourite healthy and natural sweets and enjoy!
