Rice is a good thing. Even though it contains a lot of carbohydrates it gives you a lot of energy and make you feel full with just a little of it. My tip for you while making risotto is to replace some part of it with brown rice or wild rice, e.g. in proportion 1:4-1:3. This will make your meal even healthier, but will make the risotto less sticky. Here is a recipe for a simple risotto with carrots, mushrooms and ham.
Ingredients:
1,5 cup risotto rice
2-3 carrots
6 big mushrooms
1 small onion
vegetable stock cube
0,5 cup dry white wine
1 tbsp olive oil

Chop onion, cut carrot and fry it on olive oil together with the rice. After 3 minutes add white wine and let it evaporate. When it does add vegetable stock, around 1,5 cup. Let it cook covered on low heat until the rice absorbs the water. After that time check if rice is cooked, if not, keep adding more water until it is done. In the meantime cut mushrooms and ham in small pieces and add to the risotto around 10 minutes before the end of cooking. Finish with pepper and salt if needed.
