I love making Chilli Con Carne when I know I’m going to have a busy week ahead. It is super easy to make and if you make it in bulk it should last you for a good couple of days and if you get bored of having just chilli with rice and sour cream (it’s a must, the more the better!) you can always spice it up with some nachos and cheese, pop it in the oven and there you go – another dish in no time!
If you decide to make it in the slow cooker I would suggest you fry the onions and mince meat before, I feel it brings out the flavour and you don’t end up having raw onions in your chilli. Then chuck it all into your slow cooker, set it up on high and leave it for 2 hours.
Best served with a big glass of cold Watermelon Agua Fresca!
