Ten pudding to spełnienie wszystkich moich marzeń o bliskowschodnim deserze - nie o ciastku ociekającym syropem cukrowym albo z orzechami posklejanymi miodem, ale o delikatnym deserze intensywnie pachnącym różą i cynamonem. Jest tu wszystko, co lubię, w dodatku z nutką comfort food w lepkości i słodyczy puddingu. Zaskakująco pyszny, zwłaszcza dla tych, którym smak róży jest obcy.
na 2 porcje
1/3 szklanki ryżu krótkiego (okrągłego)
600 ml mleka (użyłam migdałowego)
szczypta soli
1/2 łyżeczki oleju (użyłam kokosowego, tylko jeśli mleko jest chude)
2-3 łyżki syropu z agawy (lub innego słodu)
2-3 łyżki wody różanej
szczypta cynamonu
1 łyżka płatków migdałowych (lub posiekanych pistacji)
płatki róż do dekoracji (opcjonalnie)
(myślę, że pysznie byłoby też użyć wody z kwiatu pomarańczy zamiast różanej i dodać kandyzowaną lub startą skórkę pomarańczy)
Zagotuj ryż z mlekiem i szczyptą soli, gotuj na średnim ogniu, pod koniec ciągle mieszając, żeby wchłonął całe mleko, ale się nie przypalił. Na koniec dodaj słód, wodę różaną, ewentualnie olej. Kiedy ryż wchłonie prawie całe mleko i będzie lepki i miękki, przełóż na talerze, posyp cynamonem, płatkami migdałów i płatkami róż.
Eng: This pudding made all my dreams about a Middle East dessert come true. Not a dessert glazed with sugar syrup or filled with crushed nuts and honey, but a delicate dessert smelling of rose and cinnamon. It has everything I like, what's more - there's a little comfort food note in the sweetness and stickiness of the pudding. Surprisingly delicious, especially for those unfamiliar with the taste of rose.
2 portions
1/3 cup short grain rice
2,5 cup milk (I used almond milk)
a pinch of salt
1/2 tsp coconut oil (optionally, if the milk is not full-fat)
2-3 tbsp agave syrup or another sweetener
a pinch of cinnamon
1 tbsp almond flakes (of crushed pistachios)
rose petals (optionally)
(I think it would be equally delicious with orange flower water and grated orange zest)
Bring the rice, milk and salt to boil, cook on medium heat, stirring regularly, so that it does not burn. Add the sweetener, rose water and the oil at the end. When almost all the milk is absorbed, put in small bowls, serve with cinnamon, almond flakes and rose petals.
