It is time for some casserole and some meat-proteins! I suggest healthier (of course) shepherd's pie. This one is made with minced beef (not too much) and mashed sweet potatoes instead of normal ones. Sweet potatoes add here not only more taste, but also nutritions such as beta-caroten. What they do not add are calories ! ;-)
Ingredients: 2 big sweet potatoes 200g good quality minced beef 1 onion 1 garlic clove 2 carrots 0,5 medium celeriac Beef stock Grated cheese if you like (Gruyere recommended)
Let's get cookin'! Peel sweet potatoes , cut in 1 cm cubes and cook on steam until soft (or in water, if you cannot do it on steam). Add some salt and pepper and smash them (for this healthy version we do not need any butter, but you can add milk if the consistency is not right). Cook the meat on frying pan (without adding oil). If you think there is too much fat, remove it with paper towel ( but leave some for cooking vegetables). Chop onion and garlic, grate carrots and celeriac and add them to the meat. Let fry a little, then add half a glass of beef stock and let everything stew until the water evaporates. Add some freshly grinded pepper.
Use 4 small ramequins (or bigger ovenproof dish) and place the beef-vegetable stew in them. Place some cheese on top and cover with mashed sweet potatoes. Use a fork to spread it evenly and to decorate with lines. Bake 20-25 minutes in 220C. Enjoy!
