I had my first training session today and am so exhausted.I need a fuel. And because T.brought yesterday some minced beef I decided to make bolognese but my way.
The portion will be probably for around 5 people,max 6.Depends how hungry you are...I will probably just freeze half and have it another day when really do t want to cook :-)
You will need:
500g of minced beef
1 red chilli,chopped,without seeds
3 cloves of garlic
1 medium red onion,chopped
5 sun dried tomatoes
200 ml dry red wine
200 ml chocolate red wine(if you don't have it use just red)
100g of mushrooms
400g tin of chopped tomatoes
400g passata
10 black olives
3 tbsp tomato purée
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried thyme
1 tbsp balsamic vinegar
1 tbsp brown sugar
Salt and pepper to taste
2 tbs olive oil
First heat the olive oil,add onions and garlic and entry fry for 2min, you don't want to burn the garlic so keep the low heat.Next add the chilli and sun dried tomatoes, fry another 2min,after that add meat and wine.Increase the temperature and cook till the wine is reduced to 1/3.Add spices and mushrooms. Cook 5min and add chopped tomatoes and passata,vinegar and sugar,stir it well and lower the heat.Let it simmer for around 40min and it's done.
I usually mix first my pasta with pesto and then pour sauce on the top,sprinkle with Parmesan cheese and toasted pinenuts.Yummy!!!
