"NUTELLA" TOFU CHEESECAKE
Tofu rozpusta ;) Mocno czekoladowy, mocno kremowy, z wyraźnym akcentem orzechów laskowych, przywodzi na myśl wyjadany ze słoika popularny krem.

Słodki i dekadencki wręcz deser. Cieszy oko i podniebienie, idealny na Wielkanoc, bo przecież sernika z tofu nie może zabraknąć na wegańskim stole świątecznym ;)
Do tego prosty do przygotowania, bez glutenu i nie wymagający pieczenia. Szybki do zrobienia, najdłużej zajmuje czekanie, aż stwardnieje w lodówce. Polecam

SKŁADNIKI (okrągła blacha o średnicy 17cm, 6-8 porcji):
SPÓD:
- 1 szklanka orzechów laskowych (130g)
- 1 szklanka świeżych daktyli (15 szt.,120g-ważone z pestkami) *
- 2 łyżki karobu w proszku lub kakao
- 2 kostki BIO tofu "Polsoja" (2x250g)
- 1,5 tabliczki gorzkiej czekolady o zawartości kakao 70% (150g)
- 3/4 szklanki brązowego cukru **
- sok z 1 cytryny
- 3 łyżki karobu w proszku lub kakao
- 1/2 łyżeczki wanilii w proszku
- 1/4 łyżeczki cynamonu
- 1/2 tabliczki roztopionej gorzkiej czekolady (50g)
- 4 łyżki mleka laskowego (z tego przepisu)
- posiekane orzechy laskowe
- płatki migdałów
- 12-15 trufli marcepanowych (z tego przepisu)
* użyłam takich daktyli, znaleźć je można w niektórych eko-sklepach i hipermarketach; jeśli jednak macie trudności z ich zdobyciem, możecie je zamienić w przepisie na suszone, zwiększając ilość do 20 i mocząc je w ciepłej wodzie przez ok. 15 minut, przed miksowaniem

PRZYGOTOWANIE:
Kostki tofu wyjmujemy z opakowania, każdą zawijamy w 2 arkusze ręcznika papierowego, kładziemy na talerzu i stawiamy na nich jakiś "ciężarek", np, butelkę z wodą lub duży słoik z zwartością; zostawiamy je tak na ok. 10 minut, ma to na celu odciśnięcie tofu z nadmiaru wody.
Następnie orzechy laskowe mielimy w młynku na mąkę, wsypujemy ją do robota kuchennego/blendera, dodajemy daktyle (z których wcześniej usuwamy pestki) oraz karob/kakao. Miksujemy kilka minut, aż masa będzie się mocno kleić. Blachę wykładamy papierem do pieczenia.
Na jej spód, wysypujemy zmiksowane składniki i wyrównujemy dokładnie spodem łyżki, szpatułką lub ręką. Wstawiamy do lodówki na czas przygotowania pozostałych składników.
Czekoladę rozpuszczamy w kąpieli wodnej. Następnie odwijamy tofu z papieru i kruszymy nad pojemnikiem blendera. Cukier mielimy w młynku do kawy i dodajemy do tofu, wraz z pozostałymi składnikami (roztopioną czekoladą, sokiem z cytryny, karobem/kakao, wanilią i cynamonem). Miksujemy na gładko. Masę wylewamy na przygotowany spód, wyrównujemy szpatułką i wstawiamy do lodówki na kilka godzin, a najlepiej na całą noc.
Następnego dnia przygotowujemy trufle do dekoracji, rozpuszczamy czekoladę i mieszamy ją z mlekiem laskowym. Siekamy orzechy. Ciasto wyjmujemy z lodówki, odwijamy z folii i polewamy czekolada, na wierzchu układamy trufle i orzechy laskowe, całość posypujemy płatkami migdałowymi i polewamy ponownie polewą. Deser przechowujemy w lodówce do 5 dni.

Tofu indulgence ;) very "chocolaty", very creamy, with a strong aroma of hazelnut, a reminiscent of the popular cream, eaten straight from a jar.
Sweet and decadent dessert. Pleases the eye and the palate, perfect for Easter, because tofu cheesecake is a staple on a vegan table for Easter, right? :)
Moreover simple to make, without gluten and does not require baking. Quick prepare, the longest is the waiting time until it hardens in the fridge.
INGREDIENTS (spring-form pan, with a diameter of 17cm, 6-8 portions):
CRUST:
- 1 C hazelnuts (130g)
- 1 C fresh dates (15 pieces, 120g-weighted with stones) *
- 2 tbsp of carob powder or cocoa powder
CHEESECAKE MIX:
- 2 firm, organic tofu blocks (2x250g)
- 1.5 dark chocolate bar with a 70% cocoa content (150g)
- 3/4 C brown sugar **
- juice of 1 lemon
- 3 tbsp of carob powder or cocoa powder
- 1/2 tsp dried vanilla
- 1/4 tsp cinnamon
TOPPINGS:
- 1/2 bar of dark chocolate (50g), melted
- 4 tbsp hazelnut milk (recipe here)
- chopped hazelnuts
- almond flakes
- 12-15 marzipan truffles (recipe here)
* I used small fresh dates, you can replace them with dried dates, increasing the number to 20 and soaking them in warm water for approx. 15 minutes before blending
** can not be replaced with liquid sweetener
PREPARATION:
Remove tofu cubes from the packaging, and wrapp each one of them in 2 sheets of paper kitchen towel, put them on a plate and put some "weight" on top, for example, a bottle of water or a large jar with something in it; leave it like that for approx. 10 minutes, it's necessary to remove the excess water from the tofu.
Next grind the hazelnuts in a coffee grinder into a flour, transfer it into a food processor / blender, add dates (remove the stones before) and carob / cocoa. Blend for a few minutes, until the mixture is sticky. Line the cake pan with baking paper.
Distribute the crust mix on the bottom of the pan, and carefully level it with the back of a spoon, spatula or using your hand. Put it in the fridge, while you prepare the other ingredients.
Melt the chocolate in a water bath. Unwind tofu blocks with paper and crumble it above the blender container. Grind the sugar in a coffee grinder and add to the tofu, along with the other ingredients (melted chocolate, lemon juice, carob / cocoa, vanilla and cinnamon). Blend until smooth. Pour it over the prepared crust, and level with a spatula. Put it in the fridge for few hours, or preferably overnight.
On the next day, prepare the toppings, make truffles, melt the chocolate and mix it with hazelnut milk, chop the nuts. Remove the cake from the fridge, take it out from the pan and unwrap fro the baking paper. Pour the chocolate on top, place the truffles on the edge and chopped hazelnuts in the middle, sprinkle everything with almond flakes and drizzle with chocolate again. Serve immediatelly. Store the dessert in the fridge for up to 5 days.
