VEGAN RHUBARB-MARZIPAN CAKE / TART (GLUTEN-FREE)

- szczypta suszonej wanilii (opcjonalnie)
(jeśli używasz migdałów w całości, najpierw zmiel je na mąkę, następnie zmiksuj wszystkie składniki na jednolitą masę: ok. 30 sekund w małym pojemniku blendera)
zamiast domowej masy, możesz również użyć gotowej, wegańskiej masy marcepanowej
PRZYGOTOWANIE:
Odrywamy 2/3 ciasta, smarujemy formę tłuszczem i wylepiamy dokładnie jej spód, pamiętając, aby wysoko wylepić brzegi. Resztę ciasta wkładamy do lodówki i zostawiamy na później, do wyłożenia góry podczas pieczenia całości. Wkładamy formę do pieca nagrzanego do 180°C i pieczemy 15-20 minut.
Nagrzewamy ponownie piekarnik do 180°C i pieczemy całość ok. 20-30 minut.
Smacznego ☺

I saw the idea to combine rhubarb and marzipan in a cake on "Jadłonomia" blog. I really liked it and decided to make my version of this dessert.
This cake is quick and easy to prepare, it doesn't contain gluten and it can be also prepared without refined sugar. It's sweet, slightly acidic from rhubarb and very flavorful, thanks to the marzipan. Lovely combination, perfect to enjoy in rhubarb season ☺

INGREDIENTS (8-10 portions, 25 cm wide cake tin):
- 1.5 portion of sweet pie crust, from this recipe
- 5-6 stems of rhubarb (approx. 500 g)
- 200 g marzipan (recipe below)
- 3 tbsp almond flakes
Marzipan:- 200 g blanched almonds or almond flour
- 3-4 tbsp amaretto liqueur or 1 tsp almond extract
- 8 tbsp xylitol or brown sugar (preferably ground in to powder)
- small pinch of dried vanilla (optional)
(If you are using whole almonds, first grind them into flour, then blend all the ingredients for approx. 30 seconds in a small blender container)instead of homemade marzipan, you can also use ready-made vegan marzipan
PREPARATION:
Prepare the crust.
Tear of 2/3 of it, grease the cake tin and line the bottom and the edges with the crust. Put the rest of the crust in the fridge, you will use it later. Now bake the bottom for 15-20 minutes in 180°C.
Remove from the oven and cool it down. In the meantime, wash and cut the rhubarb into cubes or longer pieces.
Distribut the 3/4 of the marzipan on top of the baked crust and cover it with rhubarb, then sprinkle the rest of the dough and marzipan on top.
Preheat the oven to 180 ° C and bake the cake for approx. 20-30 minutes. In the middle of the baking time, add sliced almonds on top or toast them in a pan for few minutes and put on top after you bake the cake.
Leave the cake on a counter for a while to cool down, before slicing. Serve as it is or with ice cream or whipped cream.
Enjoy ☺
