Summer break at the university enables me to spend some more time on baking, cooking and enjoying my prize for it: tasting!
To prove this to you, I open the blogging season with a sweet, yet healthy treat: the macaroon! I adapted this recipe from
Elana's Pantry.
3 cups shreded coconut
6 egg whites
0,3 cup honey/natural sweetener (white sugar forbidden, are you with me?!)
1 tsp vanilla
Optional additions: more honey, cranberries, raisins
Beat egg whites with pinch of salt until stiff. Fold rest of ingredients in, form balls and place them on baking sheet. Originally, the recipe suggests baking in 175C for 10-15 minutes, I baked few minutes longer and turned the temperature to 200C in the end.
