HAPPY BIRTHDAY SWITZERLAND! Today is 1st of August and we celebrate this beautiful country. Out of love I made this delicious quiche from sauerkraut, bacon and mushrooms. And do not think to express love through food we need aphrodisiacs. No, no, look, sauerkraut and bacon can be romantic! :-)
With the right serving you can turn them into a sweet dish :-) I decided to combine them with almond crust (for a no-flour quiche of course) and it turned out to be a delicious combination, really! Plus, healthy, of course! I assure you it made a great dinner, try it yourself!
Ingredients:
Almond crust:
1,5 cup almond meal
1 egg
1 egg white
pinch of salt
Filling:
sauerkraut (if you buy raw, boil it for 10-15 mins to make it softer)
200-300 g mushrooms
1 onion
2-3 slices bacon
2 eggs
handful grated cheese (I used Gruyere)
salt
pepper
Let`s get cookin`!
Mix ingredients for the crust with a fork until they are well combined. With a hand or spoon spread it on your quiche form covered with baking paper. Form it on the bottom of the form, you can do it with your hand, to make sure its spread evenly and its thickness is same (remember also about the walls!). Make holes with a fork and pre-bake it in 190C for around 15-20 minutes.
In the meantime: if the sauerkraut is raw, boil it, let cool and squeeze as much liquid out of it as possible. Cut it with a sharp knife. Cut mushrooms and bacon in small cubes and onion in slices. Place them on pre-warmed frying pan and let stew for some time. You do not need any oil; the bacon will release its own fat and the rest of vegetables will absorb its taste thanks to it. After they cooked a bit, add sauerkraut, salt and pepper and stew together for up to 10 mins. All the water should be evaporated. Let it cool down. After the filling is not warm anymore, add eggs and cheese and mix until well-combined. Place the filling evenly in the crust and bake for around 25 minutes in 210C. If the filling is not solid after this time, bake for another 5-10 minutes in higher temperature (just be careful not to burn the crust).
Now prepare your fork and knife, some green salad and enjoy your meal!
