Fauxleslaw because with lettuce instead of cabbage. If you have cabbage at home then of course feel free to make a coleslaw :-). Whichever it is, I offer you a version with a lower in fat dressing. Because except for that tons of mayo in traditional coleslaw I have absolutely nothing against a good portion of fresh veggies! For more nutritions I suggest adding toasted sunflower seeds and/or nuts as well as vitamin-bomb sprouts!
Ingredients
2 carrots
0,5 head of lettuce(or cabbage traditionally)
2 handfuls of your favourite sprouts
small piece of celeriac
small onion
2 handfuls sunflower seeds/nuts
Dressing
6 tbsp natural yogurt (low-fat)
1 tbsp low-fat mayo
2 tbsp apple vinegar
Salt, pepper
Mix the ingredients for dresding well togerher. Set aside. Toast nuts and seeds on frying pan set on medium fire, be careful not to burn them! Grate veggies for salad (except for sprouts), chop onion and if you use lettuce, chop it in small pieces too (it is hard to grate it, however if you use cabbage you can grate it with the rest!). Mix with the dressing and top with nuts or seeds!
